Hoisin-Glazed Tuna Burgers with Pickled Cucumber

INGREDIENTS
1/3 cup water
¼ cup cider vinegar
1 tsp. sugar
½ tsp. minced garlic
1/8 tsp. ginger
¼ tsp. crushed red pepper
24 thin English cucumber slices
½ cup Panko breadcrumbs
1/3 cup thinly sliced green onions
2 TBSP. chopped fresh cilantro
1 TBSP. low sodium soy sauce
½ tsp. ginger
1 tsp. lime zest
1 (1 pound) skinless tuna, finely chopped
1 large egg white
1 ½ tsp. dark sesame oil
1 TBSP. hoisin sauce
4 hamburger buns

DIRECTIONS
Combine first 6 ingredients in a small saucepan; bring to a boil.
Remove from heat; add cucumber.
Let stand 30 minutes. Drain.
Combine breadcrumbs and next 7 ingredients in a bowl; stir well.
Divide mixture into 4 equal portions, ½ inch thick.
Press indentation in the center of each patty.
Heat nonstick skillet over medium-high heat.
Add sesame oil to coat.
Cook patties 3 minutes on each side.
Brush tops of patties evenly with hoisin; cook for 30 seconds.
Place 1 patty on bottom of each bun; top each with 6 cucumber slices and top of bun.
Serves 4.
