We see all that flounder you’ve been reeling in–here’s the perfect recipe to highlight delicate fish with savory crab stuffing.
Ingredients:
4 large flounder fillets
8 oz. crab meat
2 tsp. mustard
2 tbsp. light mayo
1 large egg
2 tsp. old bay
⅓ cup bread crumbs
¼ cup parsley
Juice of one lemon
Directions:
- Mix together crab meat, mustard, mayo, old bay, egg, and bread crumbs.
- Set the crab mix aside and prepare a baking sheet with a thin coating of olive oil. Place into an oven and set it to preheat to 400 degrees.
- Take out your flounder fillets and dry them well with paper towels. You want your fish to brown on the baking sheet and not steam.
- When the oven is preheated, pull the baking sheet and place your flounder fillets onto it. Lightly salt and pepper the fillets.
- Top each with ¼ of the crab mixture. Spray the tops of the fillets with cooking spray and put into the oven for 13-18 minutes (depends on thickness of fillet).
- Garnish with parsley, fresh lemon slices and juice and serve.
