Jerk Shrimp Kabobs

Jerk Seasoning
2 tsp. garlic powder
2 tsp. onion powder
2 tsp. dried thyme
1 tsp. paprika
1 tsp. ground allspice
2 tsp. sugar
2 tsp. salt
1/4 tsp. ground nutmeg
1/4 tsp. red pepper flakes
1/4 tsp. ground cinnamon
1/2 tsp. black pepper
1 tsp. cayenne pepper

Shrimp Kabobs
1 lb. large shrimp peeled and deveined
2 cups pineapple chunks
1 red bell pepper cut into 1-inch pieces
1 TBSP olive oil
1 TBSP chopped parsley

For the jerk seasoning, combine all the spices and store in a jar for later use.
Heat a grill or a grill pan to medium-high heat.
Thread the shrimp, pineapple and red pepper onto skewers.
Brush the skewers with olive oil and sprinkle 2-3 tsp. of jerk seasoning over the skewers. Be sure to season both sides.
Place on the grill and cook for 3-4 minutes per side, or until shrimp are pink and opaque.
Sprinkle with parsley and serve.
