Perfectly Fried Fish Fillets

INGREDIENTS
3 lbs. fish fillets
1 egg, beaten
2 cups flour
3 cups pancake mix
3 cups club soda
1 TBSP. onion powder
1 TBSP. seasoned salt
Canola oil, for frying

DIRECTIONS
Dip the fillets in the beaten egg, then dip evenly but lightly in the flour.
Dust off any excess flour and allow the fillets to air-dry on waxed paper for 5 minutes.
Whip the pancake mix with the club soda to the consistency of buttermilk; not to thin and not too thick.
Beat in the onion powder and seasoned salt.
Add 1-inch of oil to a heavy saucepan and heat to 425 degrees.
Dip the fillets into the batter and slide into the oil a few at a time. Fry for 4 minutes on each side.
Preheat oven to 325 degrees.
Place fried fillets on a cookie sheet, place in oven to keep fish warm until all the fillets are fried.
Serves 4.
