INGREDIENTS
1 large egg, beaten
1/3 cup coconut milk
3/4 cup fine bread crumbs
1/2 cup flaked unsweetened coconut
1 tsp. lime zest
4 sea bass fillets
1/4 cup mayonnaise
2 tsp. Dijon mustard
2 TBSP. lime juice
DIRECTIONS
Preheat oven to 450 degrees.
Lightly grease a baking sheet.
Combine egg and coconut milk in a shallow dish.
Combine breadcrumbs, coconut and lime zest in another dish.
Dip fillets in egg mixture, then in the coconut mixture.
Arrange fillets on prepared baking sheet.
Bake 15 minutes or until fish flakes easily with fork.
In a small bowl whisk mayonnaise, mustard and lime juice. Serve along fish.
Serves 4.
