1/2 pineapple, peeled, cored and cut into 1/2-inch pieces
1/2 red bell pepper, seeded and chopped fine
1 avocado, pit and skin removed, and diced
2 TBSP fresh cilantro, chopped
1 small jalapeno chile pepper, seeded and minced
2 tsp dark brown sugar
3 TBSP lime juice
Salt and pepper
Gently toss pineapple, bell pepper, avocado, cilantro, and chile pepper in a bowl.
Stir brown sugar and lime juice together in a small bowl until sugar is dissolved. Stir in pineapple mixture until combined.
Season with salt and pepper to taste.
Serve. The salsa is best served within 1 hour. To make ahead, mix all of the ingredients, except avocado, together and refrigerate for up to 1 day. When ready to serve, add avocado and toss gently.
